Chicken & Vegetable Super Food Curry
(Under 500 calories per portion)
INGREDIENTS
Serves 4
4 Chicken breasts
1 onion
2 cloves of garlic
1 sweet potato
4 sweet peppers
3 mushrooms
Half a bag of spinach
1 tbsp tomato puree
1 tbsp cumin
1 tbsp turmeric
1 tbsp medium curry
Dash of lemon juice
1 pint of chicken stock
Half a tub of low fat natural yoghurt

Method
Finely chop the onion and pepper and mushrooms
Dice the sweet potato into small chunks
Fry them all with 1 tbsp veg oil until softened
Add the tomato puree and spices and stir, turn down the heat for about 1 min
Add the diced chicken, a splash of water and a dash of lemon juice and fry until the chicken is cooked through about 5 mins
Add the stock and simmer for about 30 mins
Add the yoghurt and spinach and simmer for a further 5 mins
Serve with wholegrain rice or a pitta
