Chipotle and Nduja sausage Turkey Meatballs under 500 calories
RECIPE
INGREDIENTS FOR 4
SAUCE
Cooking Spray oil
1 onion, peeled and chopped
1 carrot peeled and diced
1 pepper diced
Garlic powder - 1 tbsp (to taste)
2 tsp smoked paprika
1/2 tsp chipotle chilli flakes
500g passata
300ml chicken stock
2tbsp worcestershire sauce
200g dried spaghetti

MEATBALLS
Cooking spray oil
500g turkey breast mince
1 spring onion finely chopped
1/2 tsp chilli flakes
1tbsp Nduja Sausages paste
1 tsp dried oregano
1/2 tsp garlic powder
Black pepper to taste

METHOD
Spray oil a pan. Fry onions, carrots and peppers over a medium heat for approx 5 mins. Add the garlic powder, paprika and chilli flakes and stir for another minute. Finally add the passata, stock and worcestershire sauce and add pepper as required. Simmer for 20 minutes until the vegetables are soft and puree if preferred.
Meanwhile mix all the meatball ingredients together and divide into 20 meatballs evenly.
Cook the pasta.
Fry the meatballs for approx 10 minutes ensure cooked through. When finished add the sauce and simmer for 2 minutes. Add the spaghetti and mix and serve. Hot, spicy and yummy!
