HONEY CHICKEN

HONEY CHICKEN - under 600 calories per portion

INGREDIENTS FOR 4
4 chicken breasts boneless and skinless
1/3 pot of honey approx 100g (gently heat the honey over a stove to melt if hard)
2 tbsp soy sauce
2 tbsp lemon juice
3 large cloves garlic grates or crushed
METHOD
Preheat the oven to 220 degrees celsius.
Dice the chicken breasts
In a large bowl mix the chicken, honey, soy sauce, lemon juice and garlic. 
Let marinade for at least 30 minutes and overnight if you can.
Arrange chicken in a single layer and bake for 20 minutes on the lowest rack, turn once. Set aside about half of the marinade.
While the chicken is baking you can gently boil the marinade for 3-4 minutes to pour over the chicken and rice at the end.
Serve the chicken with rice and steamed veg or roasted veg drizzled with the marinade.
Calories are based on chicken, steamed veg and 75g dried rice per person.
Tastes amazing and a treat for the whole family.
You can dress with sesame seeds and or spring onion but I never bother - the kids don't like them anyway!
